We spoke exclusively to Cuban Chef Alain Mendiola of the Anacaona Restaurant Bar at the award-winning Hotel Saratoga, in the heart of Havana that’s played host to some hot shots like Rihanna, Beyoncé and Jay-Z, on his first visit to Malaysia as he promotes Cuban cuisine at Qba Latin Bar & Grill, Westin Hotel Kuala Lumpur this August 10th- 22nd.
MC: What’s your signature dish and favourite to prepare?
AM: I like preparing Fusion-Cuban, it gives me the opportunity to mix flavours and explore the Cuban taste.
MC: Is Cuban cuisine alike any other Latin American cuisine?
AM: No, not really. We use significantly different ingredients compared to the rest.
MC: Describe the typical Cuban taste to us who are yet to try it.
AM: Cuban cuisine is very rich in flavour, spicy at most times and also have taste influences from Spanish, French, African, etc. cuisines.
MC: How is it like to work in the world renowned Hotel Saratoga?
AM: It’s a really good hotel, we often get Hollywood A-listers visiting, and it gets exciting having to serve them as a team.
MC: Are you excited to be here in Malaysia?
AM: Yes, I very much am and looking forward to promote the taste of Cuba in the next two weeks. The people seem nice and am excited to try some Malaysian food as well!
