Oyster first-timers may not know where to start – the menu has a full page dedicated to oysters flown in fresh once a week from the Irish shores to the south coast of France. We picked the Marenne Oleron oysters in No.3. Served on a bed of shredded ice, they were accompanied with lemon wedges and a sauce of diced shallots and Tabasco. We suggest skipping the condiments on the first go to savour the delectable morsel bare. A noticeable quality is the predominance of sweetness over saltiness, as the fresh briny tang was well balanced and barely overpowering. Another thing that sets the Marenne Oleron apart is its decidedly firm consistency in flesh. For those who prefer their shellfish cooked, the menu also offers oysters baked with cheese and fresh parsley.
