Nearly six months after its successful launch in July, Birch still manages to captivate the hearts of the public, as the widely popular brunch and dining spot is always booked out on weekends. It doesn’t deter the crowd, walk-ins are aplenty. When we visited on a Tuesday night, it was bustling with activity: families and after-work crowd alike. Birch is born from the creators behind the Huckleberry Group, as guests will see a hint of it in its dinner menu. Taking pride in its philosophy, Birch focuses on providing good, honest, comfort food; highlighting contemporary takes on Latin, Nikkei, and Neo-Asian cuisines – with the help of a Josper oven (a sophisticated version of a barbecue grill) in its kitchen, umami and juiciness of the meats cooked on it are guaranteed.

SMOKED QUAIL EGGS
A sought-after delicacy, the smoked quail eggs make a good start to the meal. The best way to eat this is to pop the whole egg into your mouth and bite right into the center–the runny yolk bursts to combine with the flavours of tobiko (flying fish roe), which has been marinated in soju, mirin, and sake.
