The Rebellious Chickpea certainly lives up to its aim of providing healthy food that tastes and looks as amazing as it’s supposed to be for your body. Fresh, healthy and natural as their Facebook description claims, the Thai Sweet Chilli Kampung Chicken Salad didn’t disappoint.
Thai sweet chilli kampung chicken salad
Rebellious trail mix
Crisp fresh greens, raw baby carrots, onions, chunks of lean chicken meat and generously drizzled with tangy Thai chilli sauce, this salad was good enough to convert a self-confessed carnivore (yours truly) into a salad eater. There was just enough sauce and chicken chunks in proportion to the sizeable portion of veges so don’t fear that you’ll be left with plain ole vege to chomp on by the end of the meal. I absolutely loved the sauce which pulled together the whole salad and really spiced up the meal. For those who are afraid that it might be too spicy, well guess what, it wasn’t!
“The meal came with a jar of healthy trail-mix snack aptly named the Rebellious Mix. Whole cashews, tart cranberries, sunflower kernels, dark chocolate chips and candy canes made for a unique mix that satisfied the palate. Neither overwhelmingly sweet nor dry, the mix provided the perfect end to a satisfying lunch. The cranberries were still slightly juicy and had a distinctly tart taste to them that complemented the dark chocolate chips and candy cane bits. The cashews aren’t crunchy as you’d expect though, with a texture closer to macadamias. However the sunflower kernels made up for it by being delightfully crunchy little morsels hiding at the bottom of the jar.”- Rachel Ng
Kampung Chicken Ginger and Spring Onion with Brown Rice
The Rebellious Chickpea has done it again with their Kampung Chicken Ginger and Spring Onion with Brown Rice that not only sticks to their mantra of providing healthy and tasty meals but also brings back memories of a warm home-cooked meal with its tantalizing aroma.
Today’s spread consisted of a very tender chicken drumstick cooked in ginger and spring onion with a serving of brown rice. The aroma of the ginger and spring onion mix smelled amazingly like a Chinese stir-fry decided to set up shop right here and whetted more than just my appetite alone.
“The slight bite of the ginger proved that one doesn’t need a whole lot of ingredients to pack a punch taste-wise. The brown rice came in a healthy portion and definitely will be keeping me full till it’s time for dinner (and possibly beyond). Despite the rice being a little on the dry side as the sauce seemed to have been soaked up by the bottom layer of the rice only and leaving very little for further mixing (way to go for absorbing moisture, brown rice!), the taste was still amazing. The rice that was soaked in the sauce proved to be very flavourful and not too heavy on the spiciness of the ginger which certainly was a wonderful surprise as I’ve had one too many bad experiences involving ginger prior to trying this homey combination of chicken, ginger and spring onion. The chicken was well-cooked and easily peeled off the bone, making it one of the best chicken drumsticks I’ve tasted in a long while. Hunks of ginger abound in the lunchbox though, so if you’re not a fan of ginger and its distinct spicy taste, do be wary of biting into the pieces.”- Rachel Ng
Surprise me Wednesday!
“The Rebellious Chickpea’s Surprise Me Wednesday menu proved to be an Asian twist on the classic seafood Carbonara. Instead of a rich cream sauce which is often heavy on fat and calories, the innovative minds behind The Rebellious Chickpea have come up with a salted egg yolk sauce with some cili padi thrown in for added kick. The pasta has been cooked al dente and has a nice bouncy texture to it. The pasta was topped off with a generous serving of mussels and shellfish, definitely a plus point for a seafood lover like me. The mussels were slightly overcooked but still tasted amazing with the spicy sauce and pasta. I’d definitely recommend it to those who are constantly hunting for spicy healthy food as this one took the chilli levels up with tiny bits of cili padi nestled within the creamy salted egg yolk sauce. For those who can’t take the heat, it might be best to root out the cili padi before you take a bite. All in all, a great seafood meal that left me satisfied.”- Rachel Ng
